Troll Alert! Chemtrail lunatics here to thumb down answers from pilots, engineers, and scientifically (un-retarded) people. So why bother, here's the answer you're looking for:

The government collaborates with the airlines and the military to load up tank fulls of poisonous chemicals designed to be released into the atmosphere, having amazing sinister effects like turning you into a mindless zombie. The fact that you started out as a mindless zombie BEFORE the use of chemtrails is worth taking note of. Anyway this chemtrail spraying crap has been going on since 1975 and it's STILL a big secret, even though the FAA, airlines, and law enforcement communities just go right along with it and happily carries out chemical raids over populations in civil airspace. (Any whistle blowers simply get whacked and are put in with the chemicals).

Ianab:
Condensation Trials

It's water vapour condensing and freezing in the cold air at high altitude.

It's exactly the same effect as when you see your breath condensing on a cold morning.

More Scientific reason is that the engine is burning hydrocarbon fuel. The exhaust gasses are CO2 and H20 (Water) This comes out of the engine as a hot clear gas, but as it cools in the -50C air it soon condenses and turns to ice crystals. If you look close, you will see that 50-100 feet behind the engine the gas is clear? That's how long it takes to cool off.

After a while they dissipate as the water evaporates.
